Method
- In a large mixing bowl, combine soy protein crisps, brown rice cereal crisps and chia seeds.
- In a small saucepan over low heat, melt peanut butter, maple syrup, coconut oil, salt and coconut sugar until smooth and fully combined.
- Pour the warm mixture over the dry ingredients and mix thoroughly until evenly coated.
- Transfer mixture into a lined loaf tin or slice tray.
- Press down firmly to compact the mixture (this step is important for structure).
- If using, spread melted dark chocolate evenly over the top.
- Refrigerate for 1 to 2 hours until set, then slice into 12 bars.
